CLONE OF A CINNABON

Who doesn’t love hot, cinnamon rolls on a cold winter morning?! Especially with a hot cup of coffee! MMMMmmm!

  • 1 cup warm milk (110 degrees F/45 degrees C)

  • 2 eggs, room temperature

  • 1/3 cup margarine, melted

  • 4 1/2 cups bread flour

  • 1 teaspoon salt

  • 1/2 cup white sugar

  • 2 1/2 teaspoons bread machine yeast

  • 1 cup brown sugar, packed

  • 2 1/2 tablespoons ground cinnamon

  • 1/3 cup butter, softened

  • 1 (3 ounce) package cream cheese, softened

  • 1/4 cup butter, softened

  • 1 1/2 cups confectioners’ sugar

  • 1/2 teaspoon vanilla extract

  • 1/8 teaspoon salt

  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.

  2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.

  3. Roll dough into a 16×21-inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9×13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

  4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners’ sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

  • 2 cups ice

  • 1 cup strong brewed coffee, cooled

  • 1 cup low-fat milk

  • 1/3 cup caramel sauce

  • 3 tablespoons white sugar

  1. Blend ice, coffee, milk, caramel sauce, and sugar together in a blender on high until smooth. Pour drink into two 16-ounce glasses.

CHEDDAR BAY BISCUITS

  • 4 cups baking mix

  • 3 ounces Cheddar cheese, shredded

  • 1 1/3 cups water

  • 1/2 cup melted butter

  • 1 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/8 teaspoon onion powder

  • 1/8 teaspoon dried parsley

  1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the baking mix, cheese, and water. Mix until dough is firm. Using a small scoop, place dough on the prepared pan.

  3. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes, or until golden brown.

  4. Combine the melted butter, garlic powder, salt, onion powder, and parsley. Brush over baked biscuits immediately upon removing from oven.

SUPER-DELICIOUS ZUPPA TOSCANA

  • 1 pound bulk mild Italian sausage

  • 1 1/4 teaspoons crushed red pepper flakes

  • 4 slices bacon, cut into 1/2 inch pieces

  • 1 large onion, diced

  • 1 tablespoon minced garlic

  • 5 (13.75 ounce) cans chicken broth

  • 6 potatoes, thinly sliced

  • 1 cup heavy cream

  • 1/4 bunch fresh spinach, tough stems removed

  1. Cook the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside.

  2. Cook the bacon in the same Dutch oven over medium heat until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings with the bacon in the bottom of the Dutch oven. Stir in the onions and garlic; cook until onions are soft and translucent, about 5 minutes.

  3. Pour the chicken broth into the Dutch oven with the bacon and onion mixture; bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 20 minutes. Reduce the heat to medium and stir in the heavy cream and the cooked sausage; heat through. Mix the spinach into the soup just before serving.
