Grilled Cilantro Shrimp
When I find fresh fish at the market, no question I buy it (befriending your local fishmongers is a great idea. They’re experts and will let you know what is good to buy). This week I stumbled across some pretty prawns that were perfect for a delicious and simple meal involving my grill. Who doesn’t love delicious and simple?
The combination of cilantro, garlic, and citrus is the perfect food melody I could eat on anything, and A LOT of it! These ingredients are simple and fresh but packed with complex flavors to accompany my shrimp. Not only is it easy, it is also universal. This recipe is great over a salad, for tacos, or just served tapas style.
Grilled Cilantro Shrimp
Ingredients:
5 lbs fresh medium shrimp, peeled and deveined
¼ cup butter, softened
¼ cup cilantro, chopped
2-3 cloves of garlic, minced
1/8 teaspoon red pepper flakes,
Zest of half a lemon
Juice of half a lemon
Salt & Pepper to taste
Instructions:
Preheat an oiled barbeque or a nonstick grill pan over medium high heat.
In a small bowl, combine softened butter, cilantro, garlic, red pepper flakes, lemon juice, and lemon zest. Thoroughly mix together and set aside.
Thread shrimp on skewers, 3-4 shrimps per skewer. Salt and pepper. (If using wooden skewers, be sure to let soak in water for at least 20 minutes.)
Place each skewer on grill or grill pan. With a basting brush, brush the shrimp with cilantro butter mixture while the shrimp cook. Turning once, allow shrimp to cook just until bright pink and opaque, about 4-6 minutes. Continue to baste with butter. Remove from grill and serve with lemon wedges. Enjoy!
