Grown Up Grilled Cheese
With the cold weather lately, now is the time when cozy foods are needed most. This week’s post puts a fun twist on a childhood classic and is certain to make your feel warm inside.
Forget everything your mother taught you about grilled cheese. There is so much more to a grilled cheese than bread, butter, and cheddar cheese… promise. In cooking school, a teacher once told me that mayonnaise is the secret ingredient to perfect grilled cheese. I didn’t believe him and disregarded the suggestion. Three years later, the mayo-grilled cheese combination became a trend so I gave in and tried it. The experience was life changing in the world of toasted bread and melted cheese. Adding fancy cheeses and yummy ingredients to my sandwich was also a game changer. Whether you’re enjoying a yummy sandwich on your own or entertaining with a fancy grilled cheese bar, Grown Up Grilled Cheese is always a good idea.
In terms of comfort food, grilled cheese has to be the comfiest.
Ingredients: Measurements vary depending on how many sandwiches. Add whatever other ingredients your heart desires.
Bread:
White Pullman loaf
Sour dough
French bread
Cheese:
Fontina
Brie
Havarti
Sharp Cheddar
Add ins:
Hot pepper or fruit jelly
Mustard
Pears
Black berries, halved (make sure they’re sweet)
Bacon, crisp
ham
Caramelized onions (click link)
Fresh herbs (rosemary, thyme), minced
Butter
Mayonnaise
Instructions: Makes 1 sandwich
On a cutting board, spread two slices of bread with 2 tablespoons of mayonnaise over the top side of each piece. Melt one tablespoon of butter in a cast iron skillet over medium heat. When butter is melted, place 1 slice of bread, mayonnaise side down in the skillet. Top with your bread with desired ingredients starting with spreads, then cheese, etc. Top the sandwich with the second slice of bread mayonnaise said up. Lightly press on sandwich allowing the cheese to melt. Flip sandwich until both sides are evenly brown and cheese is completely melted. Enjoy with a warm bowl of tomato soup, preferably.
Delicious combos:
Dijon + Cheddar + Havarti + Bacon + Caramelized onions or pears
Brie + Fontina + Black berries (or fruit jelly) + thyme
Pepper jelly + Havarti + bacon or ham
Fontina + Havarti + Brie + pears + Rosemary
